Triticale Berries with Basil Oil and Seasonal Greens Stir Fry

Triticale Berries
Rinse berries well and soak overnight. Drain and simmer in water for 1 hour.

Basil

Imagine the aroma in our basil greenhouses — and imagine that same lovely scent in your own kitchen.

Basil Oil
1 1/2 cups (packed) fresh basil leaves
3/4 cup olive oil

Blanch basil in boiling water for 10 seconds. Drain and rinse under cold water. Pat basil dry with paper towels. Transfer to blender, add oil and puree until smooth. Transfer to small bowl and season with salt and pepper. Cover and chill. Can be made up to 3 days ahead. Let stand at room temperature for 30 minutes before using.

Seasonal greens
1 bunch garlic scapes
1 bunch chopped rainbow chard
1 bunch spinach
1 bunch baby dill
1 1/2 pounds fava beans, husked and blanched
2 tablespoons oil
Splash apple cider vinegar or other vinegar

In a medium skillet, saute garlic scapes and 1 cup cooked triticale berries in 2 tablespoons oil. Once berries start to turn golden brown, add fava beans, rainbow chard, baby dill and spinach. Cook for about 10 minutes, stirring frequently. Once the greens cook down, add a splash of vinegar. Take off stove, plate up, and drizzle with basil oil.

For a more meaty option, serve with Nash’s spicy Italian sausage, made into patties and pan fried. Makes a great sweet and spicy combo!

Creamed Dill Corn

8 ears corn
1 tablespoon olive oil
2 teaspoons honey
1 teaspoon corn flour
Salt and pepper
1 cup heavy cream
1/2 cup cold water
2 tablespoons butter
Fresh dill to taste

Corn on the cob

Fresh dill goes so well with fresh corn!

Shuck the kernels from the corn. Saute onion in olive oil. Add corn and cook for 4-5 minutes.

Whisk corn flour, cream, water, honey, salt and pepper. Add liquid mix to corn and onion. Simmer and stir until mixture becomes creamy, about 15 minutes.

Stir in dill and serve.

Smoked Salmon and Corn Chowder

2 ears of corn, shucked
3 medium leeks, cleaned and sliced (3 cups)
1 clove garlic, minced
2 tablespoons olive oil
1 stalk celery, chopped
1 large russet potato, peeled and cubed
1/2 teaspoon salt
8 ounces smoked salmon
4 cups fish broth
1 cup heavy cream
Dill for garnish

Corn on the cob

Locally grown (and non-GMO) corn on the cob!

Heat olive oil. Sauté leek and garlic.

Add potato, celery salt and pepper. Cook over medium heat, stirring constantly.

Add broth and simmer until potato is tender, about 10 minutes.

Add milk and salmon and bring the temperature back to a simmer. Do not let it boil or milk will separate.

As the mixture simmers, stir in cream.

Top each serving with chopped dill.

Chicken with Herbs

Fresh herbs lend their flavors to sauteed chicken.

Chicken doesn’t have to be fancy to be very tasty!

2 chicken breasts
1/4 cup fresh cilantro, chopped
1/4 cup fresh dill, chopped
1/4 cup fresh basil, chopped
1 small onion, chopped
1 clove garlic, finely chopped
2 plum tomatoes, coarsely chopped
Juice of 1 lemon with 1/2 teaspoon lemon zest
1 tablespoon olive oil
1/4 teaspoon paprika
Salt and pepper

Basil

Our greenhouses here at Nash’s are bursting with basil, and our dill and cilantro are soaking up the summer sun outside.

In a skillet, heat up the oil and butter on medium heat and put in the chicken, fat side down. Saute until golden. Flip and cook for another minute.

Push the chicken to the side and add the garlic and onions. Cook for a few minutes until either the onions or the garlic are just starting to brown. Lower the heat to low and cook for about 10 minutes.

Add the tomatoes, chicken, paprika, salt, pepper, half the lemon juice, half the cilantro, half the dill, and half the basil. Cover again and continue cooking on low for 30 minutes.

Right before serving, add the other half of the lemon juice, cilantro, dill and basil, which will be very fresh and bright. Serve with rice.
