Napa Cabbage & Quinoa Salad

Napa cabbage

Napa cabbage is excellent for salads because of its crisp, lacy texture.

1 cup fresh basil
1/2 cup walnut pieces
1/2 lemon, juiced
1 tablespoon apple cider vinegar
1 tablespoon raw honey
1/2 cup extra-virgin olive oil
1 head Napa cabbage
1 cup spinach, roughly chopped
1 carrot, grated
1-1/2 cup quinoa, cooked and cooled

In a blender, mix basil, walnuts, lemon juice, vinegar, honey and oil until smooth. In a separate bowl, combine cabbage, spinach, carrot, and quinoa. Pour dressing into salad mix and toss until evenly distributed.

Creamy Garlic Salad Dressing

2 bunches baby turnips, roasted and cooled
1/2 cup of olive oil
1 bunch garlic scapes, chopped
1 teaspoon maple syrup or honey
Salt and freshly ground pepper
1/4 cup sunflower seeds (optional)

Blend roasted turnips with olive oil. Slowly add garlic scapes, maple syrup or honey  salt and freshly ground pepper and sunflower seeds, if desired.

Garlic Salad Dressing

The raw garlic in this dressing gives you tons of health benefits — not to mention a tasty flavor!

Makes 3/4 cup

1 teaspoon Dijon mustard, smooth or grainy
2 tablespoons plus 1 teaspoon raw wine vinegar
1/2 cup extra-virgin olive oil
1 tablespoon expeller-pressed flax oil
1 clove garlic

Dip a fork into the jar of mustard and transfer about 1 tsp to a small bowl. Add vinegar and mix around. Add olive oil in a thin stream, stirring all the while with the fork, until oil is well mixed or emulsified. Add flax oil and use immediately. Peel garlic clove and mash into a garlic press or fine grater. Stir into dressing. Let site a few minutes to allow amalgamation of garlic flavor.

Warm Potato Salad with Goat Cheese

Dressing
1 tablespoon white wine vinegar or sherry vinegar
1 tablespoon freshly squeezed lemon juice
Salt to taste
1 teaspoon Dijon mustard
1 small or medium clove garlic, minced or pureed
1/3 cup olive oil — for low-fat dressing, use 1/4 cup yogurt or buttermilk and 2 tablespoons olive oil

Whisk together the vinegar, lemon juice, salt, mustard and garlic. Whisk in the olive oil. Taste and adjust seasonings. You can make it several hours in advance.

Salad
1 1/2 pounds fingerling potatoes, washed
Salt and fresh ground pepper to taste
3 tablespoons finely chopped red onion, rinsed with cold water and drained
2 tablespoons chopped Italian parsley
2 ounces soft goat cheese
2-3 sage leaves, cut into thin slivers (optional)

Cut the potatoes into 3/4-inch slices. Steam above 1 inch of boiling water until tender but not mushy, about 10-12 minutes. Remove from heat and while still hot, toss in a bowl with salt and pepper, red onion, parsley, goat cheese and the dressing. Sprinkle the sage over the top and serve.

Kitchen Sink Potato Salad

Imagine all the colors swirling around this potato salad like confetti!

Salad
7-8 soft potatoes, boiled, sliced, and peeled
1 large beet, boiled, sliced, and peeled
2 carrots, sliced
4 stalks celery, chopped
5 garlic scapes, chopped
1/4 cup sunflower seeds
1/4 cup chopped parsley
3 hard-boiled eggs, chopped

Dressing
1/2 cup mayo
Juice of 1 lemon
1/4 cup dijon mustard
Salt, pepper and paprika to taste

Mix salad ingredients in a large bowl.

Mix dressing ingredients in a small bowl. Combine the two with a spatula.

Refrigerate until cool.

Nash’s Kale Slaw

Want some color in your cole slaw? Try kale slaw instead!

1 bunch Nash’s red kale, shredded
2 carrots, shredded
1 small red or walla walla onion, minced
2/3 cup olive oil
1/3 cup balsamic vinegar
1 tablespoon fresh lime juice
1 teaspoon maple syrup
1 pinch salt
1 pinch ground black pepper

Stir together the kale, carrots, and onion in a very large bowl; set aside. Whisk together the olive oil, vinegar, lime juice, maple syrup, salt, and pepper. Pour the dressing over the vegetables, and stir thoroughly, making sure to coat the vegetables very well. Chill in the refrigerator for two hours before serving.

Holiday Kale Salad

Kale only gets sweeter during the winter. Kale plants produce sugars as antifreeze, making this salad sweet as well as colorful and nutritious.

1/2 cup lemon juice
1 tablespoon vegetable oil
1 tablespoon olive oil
1 teaspoon organic sugar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 bunch kale, cut into small bite-size pieces
1 large or 4 small tomato(s), diced
1/2 cup roasted sunflower seeds
1/2 cup dried cranberries

Whisk lemon juice, oils, sugar, salt, and black pepper in a large bowl. Add kale, tomato, sunflower seeds, and cranberries; toss to combine.

Prefer a wilted kale salad? Bring the dressing ingredients to just shy of boiling in a sauce pan. Remove from heat. Stir in the kale bits and let cool. Add the other ingredients, toss, and serve.

Parsley Salad

Parsley isn’t just a garnish — it’s the tasty highlight of this vibrant salad.

For the Salad
4 packed cups curly parsley leaves
3 ounces parmigiano-reggiano, coarsely grated or shaved
1 1/2 cups oil-packed sun-dried tomatoes, drained and sliced into a medium julienne
1 teaspoon minced garlic

For the Dressing
1/2 packed cup basil leaves
3/4 cup extra-virgin olive oil
1/4 cup rice vinegar
Salt and freshly ground black pepper
1 shallot, minced
1 clove garlic, minced

For the Salad
Carefully wash parsley to remove any dirt; dry well and place in a salad bowl. Add parmigiano-reggiano to the parsley. Add sun-dried tomatoes, along with garlic. Toss well to combine.

For the Dressing
Carefully wash basil to remove any sand, then dry well. Place the basil leaves in the bowl of a food processor and add oil, vinegar, and salt and pepper to taste; process until smooth. Stir shallots and garlic into the dressing.

Drizzle dressing over salad and toss well to combine ingredients. Taste and adjust seasonings. Divide among six salad plates, garnish with some shaved parmigiano, and serve.

Kale & Triticale Risotto

Risotto isn’t just for rice anymore — make your risotto with one of Nash’s whole grains, like our nutty triticale.

1/2 pound Nash’s triticale berries
1 bunch lacinato kale leaves, ribs and stems removed
1 tablespoon extra virgin olive oil, divided
2 cups veggie or chicken broth
1 medium shallot, sliced
1/2 tablespoon butter
2 cloves garlic, sliced
3 ounces Parmesan cheese

Wash and soak berries overnight. Cook as you would rice (1 part grain, 1 1/2 part water) for about 1 hour or until tender. Drain and coat with a bit of olive oil.

Coarsely chop kale and reserve. In large sauce pan, warm oil on medium heat and add shallot. Cook about 2 minutes, then add kale and wilt together for 2 minutes, then add garlic. Saute 30 seconds, stirring occasionally, then add broth and simmer about 10 minutes or until broth is mostly absorbed. Add butter, Parmesan cheese and cooked triticale.  Add salt and pepper to taste.  Garnish with chives and more Parmesan cheese if desired.

Quinoa, Beet & Arugula Salad

Which is your favorite beet for a quinoa and arugula salad?

1/2 pound beets
1 cup uncooked quinoa
2 cups water
1/2 cup olive oil
1/2 cup red wine vinegar
1 1/2 tablespoons honey
1 clove garlic, crushed
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup onion, diced
1/2 pound arugula, chopped
5 ounces goat cheese

Cook beets until tender, then peel and slice. Bring water to boil, add quinoa, reduce heat, cover, and simmer for 15-20 minutes. Whisk vinegar, olive oil, honey, garlic, salt, and pepper together. Remove quinoa from heat, add 1/2 of the salad dressing, cover, and refrigerate for 1/2 to 1 hour. Stir in onion, arugula, goat cheese, beets, and remaining dressing, toss, and serve.
